Feast Menu Lady
Safaya will prepare traditional middle eastern cuisine and serve in the style of a traditional breaking fast feast at sundown.
The menu should include most or all of the following items.
Many thanks go to Lady Safaya for sharing her culture, her research and her passion for food with us.
We all look forward to a wonderful meal.
Breaking Fast
- Platters of dried fruit, dates in milk,
and nuts.
Second Course
- Vegetable, grain and broth soup
Meal
- Dip (chickpea, almond, ginger and cinnamon - more authentic version of hummus).
- Dip (pureed eggplant in yoghurt - like babaganouche)
- Olive Salad (chopped olives, walnuts, toasted sesame seeds, sesame oil, rose water & spices).
- Garlic Couscous.
- Rice with cinnamon, pine nuts, pistachios and raisins.
- Rice with vegetables, spices and broth.
- Stuffed Bell Peppers (with rice raisins, almonds, lemon juice, spices).
- Cold Chicken (marinated in spices, rose & orange water.
- Baked Meatballs (ground beef with onions, garlic & spices).
- Lots of Middle Eastern Bread !!
- Apricot Lamb with orange water (subject to availability)
